Ingredients:
- 1 cup AGE rice
- 1/4 tsp saffron strands
- 1/4 cup warm milk
- 1 onion, sliced
- 1/2 cup mixed nuts (cashews, almonds, raisins)
- 2 tbsp ghee or butter
- Salt to taste
- 2 cups water
Instructions:
- Prepare Saffron: Soak the saffron strands in warm milk and set aside for later use.
- Cook Onions: In a heavy-bottomed pot, heat ghee or butter over medium heat. Add sliced onions and sauté until they turn golden brown.
- Fry Nuts: Add mixed nuts to the pot and fry until golden. Remove them and set aside.
- Cook Rice: In the same pot, add the soaked and drained AGE rice. Pour in 2 cups of water and add salt to taste. Bring to a boil.
- Add Saffron: Once boiling, reduce the heat to low, and let it simmer for about 15-18 minutes or until the rice is cooked and the water is absorbed. Stir in the saffron milk and gently fold.
- Serve: Top with the fried onions and nuts. Serve warm as a side or main dish.
