Creamy Rice Pudding

Ingredients:

  • 1/2 cup AGE rice
  • 2 cups whole milk
  • 1/4 cup sugar
  • 1/2 tsp cardamom powder
  • 1/4 cup chopped nuts (almonds, pistachios)
  • A pinch of salt

Instructions:

  • Rinse Rice: Rinse the AGE rice under cold water until the water runs clear, then soak for about 30 minutes.
  • Cook Rice in Milk: In a heavy-bottomed saucepan, bring the milk to a boil. Add the soaked rice, sugar, and a pinch of salt. Reduce the heat and let it simmer.
  • Stir Occasionally: Stir the mixture occasionally to prevent sticking, cooking for about 20-25 minutes or until the rice is soft and the pudding thickens.
  • Add Flavor: Stir in the cardamom powder and half of the chopped nuts. Mix well and cook for an additional 2-3 minutes.
  • Serve: Transfer to bowls, garnish with the remaining nuts, and serve warm or chilled.
